Vegetarian Stuffed Peppers Recipe

INGREDIENTS FOR THE RECIPE

Bell peppers (any color)

Oil

White onion, diced

Cloves garlic, minced

Black beans, drained and rinsed

Corn kernels

Chili powder

Cumin

Cooked Rice, Salt and Pepper to taste

Steps 

Preheat oven to 350 degrees Fahrenheit.

Cut the tops off of the bell peppers and remove the seeds.

In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.

Add cooked rice, black beans, corn, chili powder, cumin, salt and pepper to the skillet and stir to combine.

04.

Spoon mixture into the bell peppers. Place peppers in a baking dish and bake for 20-25 minutes, or until heated through.

05.

Serve warm with a dollop of your favorite sauce (optional). Enjoy!
