Ingredients Required for making Gobi Gajar Shalgam ka Achar Recipe: 

  •  500 gm Cauliflower (Gobi) or 1 Medium-sized Gobi
  • 500 gm Carrots (Gajar) or 7 to 8 long tender Gajars
  • 500 gm Turnips (Shalgam) or 2 large Shalgams
  • 3 tbsp Cumin Seeds
  • 10-12 Cloves
  • 2 Black Cardamom
  • 1 tbsp Fennel Seeds
  • 3 tbsp Mustard Oil
  • 1 Chopped Ginger
  • 1 Chopped Garlic
  • 5-6 Chopped Green Chili
  • 2-3 Sliced Ginger
  • 1 cup Vinegar or 250 ml Vinegar
  • 2 cups Powdered Jaggery or 400 gm powdered Jaggery
  • 1 1/2 tbsp Kashmiri red chili powder
  • 4 tbsp Garam Masala
  • Grinded masala we created
  • 3 Chopped Green Chilies
  • 1 tsp Cinnamon Powder
  • 1/2 tsp Nutmeg Powder
  • 2 tbsp. Salt
  • 2 tbsp. Mustard Powder

Step-1 Nicely wash, rinse and chop your veggies- Cauliflower (Gobi), Carrots (Gajar), and Turnips (Shalgam). Then, soak them all in salt water for some time then will let them dry for the whole night to make them crispy.

Step-2 Now for the next step add Cumin Seeds, Cloves, Black Cardamoms, and Fennel Seeds. Mix them all together and let them, roast until they turn Brown Golden.

Step-3 Let them cool down for a while then let’s grind them all into a fine powder.

Step-4 Now for the tempering add Mustard Oil and let it heat for a while to it add Salt, Ginger (Chopped), Garlic (Chopped), Green Chilies (Chopped), and Ginger (sliced). Let the Ginger cook for a bit until all the ingredients turn reddish-brown.

Step-5 Now in this we’ll add Vinegar and Jaggery mixture, mix it a bit to this add Kashmiri Red Chili powder, Garam Masala, Grinded masala we created, Green Chilies, Cinnamon Powder, and Nutmeg Powder. Mix it together.

Step-6 Now we’ll add Salt, followed by our Veggies, and Mustard Powder. Mix it very nicely and let it cook for a while.

  • Step-1 First, rinse and chop your pickle veggies- Cauliflower (Gobi), Carrots (Gajar), and Turnips (Shalgam). Then, soak them all in saltwater for a night.
  • Step-2 Add cumin seeds, cloves, black cardamoms, and fennel seeds to a pan and roast them until they turn golden brown.
  • Step-3 Now grind this mixture together to make a powder.

  • Step-4 Take another non-stick pan and add mustard oil to it.
  • Step-5 Add finely chopped/grated ginger, garlic, and green chilies to it and add some sliced ginger.
  • Step-6 Make sure to mix it all nicely.
  • Step-7 Put the solution of vinegar and jaggery into the pan. Give it a good mix.
  • Step-8 To this, add Kashmiri red chili powder, garam masala, the grinded powder mixture, chopped green chilies, cinnamon powder, and nutmeg powder, and mix it well.
  • Step-9 Now, add salt, your overnight soaked veggies, and mustard powder.
  • Step-10 Give it a good stir ensuring the veggies are coated with the masala. Let it cook for about 2-5 minutes before turning off the heat.
