Chana dal and urad dal vada are famous Indian homemade fritters made with Indian lentils (dal), spices, and herbs. This crispy, crunchy, and delicious Dal vada is easy to make and perfect for any festive season or rainy day or serving as an appetizer at a gathering.
These Vadas usually tea-time snacks and are served with a hot cup of tea or coffee with spicy and sweet chutneys like Mint chutney, Tamarind chutney, Coconut chutney, Garlic chutney, Coriander chutney, and Tomato ketchup.
You can also make this dal vada on an air fryer to make it healthier. But I make this recipe on a deep frying pan. So I have the Instructions in this post.
About Chana Dal and Urad Dal Vada
Chana Dal Vada and Urad Dal Vada are known for their crispy, crunchy outside and soft, fluffy inside. In India, there are many types of popular Indian fritters, like Medu vada, Dahi vada, and Masala Vada. This is my version of the dal vadas recipe I have been cooking for my family, friends, and relatives.
To Make this vadas you need to follow a few instructions. Lentils must be soaked adequately to ensure a thick batter or coarse paste. And after that, you can also use or add any kind of flavor to make these vadas with mango masala, red chillies, and gram masala.
To make this recipe healthier, you can also use drumsticks leaves, spinach leaves, and fenugreek leaves ( methi). you can make this recipe during any puja without onion, garlic, and green chilli.
Always remember that the deep-frying process should be done at the right temperature to achieve the crispness of the vadas. I have been deep-frying these for a few years now. So I will try to soon share with you the air fry version of this recipe.

Ingredients
- 2 Cups Urad dal (soak for 5-6 hrs)
- ¼ Cup Chana dal, soaked (soak for 3-4 hrs)
- Oil ( For deep Frying)
- ⅓ Cup Onion (roughly chopped)
- ⅓ tsp Red Chilli Powder
- ⅓ tsp Coriander Powder
- ⅓ tsp Chat Masala
- 1 tsp Cumin seeds (optional)
- 1 tsp Fennel seeds (optional)
- Salt to taste
- Curry leaves (chopped)
- 4 no. Green chillies (less spicy & chopped)
- 1 ½ inch Ginger (peeled & chopped)
- 2-3 tbsp Coriander leaves (chopped)
Steps
Preparations
- Take a medium bowl and wash the 2 cups of urad dal and ¼ cup of chana dal with fresh water. Now soak the urad dal and chana dal overnight ( for better results).
- Then drain all the excess water. Take a grinder jar, and add 2 cups of urad dal and ¼ cup of chana dal. Now grind it all together and make a coarse paste.
- Now Transfer it to a plate or parat, and add. All the Indian species, ⅓ tsp Red Chilli Powder, ⅓ tsp Red Chilli Powder, ⅓ tsp Coriander Powder, Curry leaves, chopped, 4 no. of Green chillies (chopped), ⅓ cup Onion (roughly chopped), coriander leaves and mix it well.
- Make small balls and flatten them.
Cooking
- Preheat oil in a deep frying pan, add small balls of our batter, and fry on low-medium heat until half cooked.
- Transfer it to an absorbent paper and keep it aside.
- Refry the chana and urad dal vada until crispy and golden brown in color.
- Transfer it to a serving dish, sprinkle chaat masala, and serve hot with green mint chutney or tomato ketchup.
