This famous sarso ka saag is for the winter when North Indian sarson leaves are in season and widely available. Other names for it are Punjabi saag, Sarson da saag, and Sarhon da saag. Sarson is prepared with other greens, including Bathua (Chenopodium or pigweed), spinach, methi (fenugreek leaves), and turnip leaves to balance the flavors since sarson can be somewhat bitter on its own. Sarson ka Saag is a gently spiced curry that uses a minimal amount of seasonings to let the taste of the green dominate. Ingredients required for the dish
All the Ingredients needed to make our Sarson ka Saag(Spinach, bok choy, ginger, green chilies, mustard greens, broccoli).
Chopping Saag
Let’s chop our mustard greens(saag).
Chopping Bok choy, Broccoli and ginger.
Followed by Spinach, Broccoli, BokChoy, and Ginger chop all of them.
Adding hard chopped veggies with rice and water into the pressure cooker.
Add water into the pressure cooker and to it add all the hard chopped veggies like bok choy, ginger, green chilies, and rice.
Add chopped greens
Let’s add all the greens on the top.
Add saag broccoli into it.
Now we’ll let it steam for a while and slowly when the veggies will start to settle then we will put the rest of the greens which are left.
To it add spinach.
It’s time to add our spinach with the rest of the ingredients.

If your sarson greens are bitter, we advise reducing the amount you use and proportionally increasing the amount of spinach.

Alternatively, you can remove the cooking water from the greens, as my mother-in-law used to do; We don’t recommend doing this because you miss out on some of the benefits, but it should lessen the bitterness you taste.
