Instructions:-

To make Dahi Bhalla we have soaked 1 cup of Urad Dal and 1/2 cup of Yellow Moong Dal overnight or can be soaked in hot water for 2 hours drain the excess water out of it and now it’s time to grind.

Now put the dal slowly(batch-wise) in the grinder to it add Ginger, Cumin Seeds, and Dhaniya Powder now grind all the ingredients nicely.

Once it’s grinded whisk the batter nicely until it starts to fluff up then add Salt, and Dhaniya powder and mix it well.

Pre-heat the oil add small balls of batter into it and let it fry properly.

Flip it over and make sure that the Vadas are cooked and crispy from both sides take them out.

Now take warm water add Asafoetida and Salt mix it a little bit and add our cooked vadas / Bhalla and let them soak in the water until they turn soft and squeezy.

Squeeze the water out of them, then for making Dahi we’ll take Dahi add Sugar and Salt and mix it together.

Now pour Yogurt on top of the Vadas and top it up with Kashmiri Red Chili Powder, Garam Masala, Salt, Dates and Tamarind Chutney, Coriander Chutney, Onion, Chat Masala, and Aloo Bhujia. Our Dahi Vada/ Bhalla are ready.

- Use half urad dal and half moong dal to make soft dahi bhalla. But if you like the flavor of urad dal, make it 75% and 25%.
- Do not add too much water to grind the lentils because you need a thick paste.
- Beat the batter nicely or whisk it well to get a fluffy batter, which will become lighter, change color, and almost double in size.
- Drop a small ball of batter in water to test the batter. It is ready to fry if it floats.
